Ice houses were used in fishing villages to store salmon before stocks were sent off to market. This example is adjacent to Cromarty Links and dates from the nineteenth century. Other examples on the Black Isle can be seen at Fortrose and Rosemarkie.

Scottish merchant, George Dempster, first used ice for preserving salmon in 1786. Prior to this, stocks were preserved by being boiled, salted and pickled. Ice was gathered from ponds and lochs or imported by sea and when ice was not available, the fish was smoked in kilns before being exported. The ice house roofs were covered over with turf to add insulation. Towards the end of the 19th century ice houses became obsolete as mechanical refrigeration was introduced
